1 whole free-range chicken, rinsed

pinch Pinch of salt

2 cups shredded chicken meat (cooked, from broth)

1 cup rice star noodles or vermicelli pasta

3 large kale leaves, chopped into bite-sized pieces

2 carrots, thinly sliced

1 red bell pepper, thinly sliced

Directions

  1. Rinse the whole chicken thoroughly under cold running water. Place it in a large stockpot and cover with approximately 2 quarts of cold water. Add a pinch of salt.

  2. Bring the water to a gentle boil over medium-high heat, then reduce to medium-low. Simmer for 60–75 minutes until the chicken is cooked through and the meat is tender enough to shred easily.

  3. Using a slotted spoon or tongs, carefully remove the chicken from the broth. Set it aside to cool slightly until it can be handled safely.

  4. Once cooled, remove and discard the skin, bones, and giblets. Shred the meat into bite-sized pieces, yielding approximately 2 cups. Set the shredded chicken aside.

  5. Strain the broth through a fine-mesh sieve into a clean pot, discarding any sediment or bone fragments. You should have approximately 6 cups of clear broth. Adjust seasoning with salt if needed.

  6. Bring the strained broth back to a gentle simmer over medium heat. Add the sliced carrots and cook for 5 minutes.

  7. Add the rice star noodles to the broth and cook according to package directions, usually 6–8 minutes, until just tender.

  8. Stir in the chopped kale and sliced red bell pepper. Cook for 3–4 minutes until the vegetables are tender-crisp.

  9. Add the shredded chicken back to the pot and heat through for 1–2 minutes, stirring gently to distribute evenly.

  10. Ladle the soup into bowls and serve hot. Taste and adjust seasoning with salt as desired.
