Ingredients

2 sweet potatoes

4 tablespoons oil, divided

1/2 cup chopped onions

salt to taste

freshly ground pepper to taste

2 eggs

fresh parsley, optional

Directions

  1. Peel and cut the sweet potatoes into small cubes, about 1/4 inch each. Keep them uniform in size so they cook evenly.

  2. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Once shimmering, add the cubed sweet potatoes in a single layer.

  3. Cook the potatoes for 12-15 minutes, stirring occasionally, until they are golden brown and tender when pierced with a fork.

  4. Push the potatoes to the edges of the skillet and add the remaining 2 tablespoons of oil to the center. Add the chopped onions and sauté for 2-3 minutes until softened and fragrant.

  5. Stir the onions together with the potatoes and season the entire mixture with salt and freshly ground pepper to your taste.

  6. Create two small wells in the potato mixture and crack an egg into each well, keeping the yolks intact.

  7. Reduce heat to medium and cook for 4-5 minutes until the egg whites are set and opaque, but the yolks remain soft, or cook longer if you prefer firmer yolks.

  8. Sprinkle with fresh parsley if desired and serve immediately while still hot.
