Curried Potatoes

Ingredients
1 small onion, finely chopped
3 cups potatoes, peeled and cut into 1-inch cubes
1/4 cup butter or margarine
3/4 cup low-sodium chicken broth
1/2 tablespoon curry powder
1/2 tablespoon fresh lemon juice
Directions
Wash your hands thoroughly with soap and water before beginning preparation.
Peel and finely chop the onion into small, uniform pieces.
Peel the potatoes and cut them into 1-inch cubes. As you work, place the cut potatoes in a bowl of cold water to prevent browning.
In a medium saucepan, bring a pot of salted water to a boil. Add the cubed potatoes and cook for 8–10 minutes until they are tender but still hold their shape when pierced with a fork.
Carefully drain the hot water from the potatoes using a colander.
Return the drained potatoes to the saucepan and cover them with ice-cold water to stop the cooking process. Let sit for 1 minute, then drain thoroughly.
In a large skillet or frying pan, melt the butter over medium heat, stirring gently.
Add the chopped onion to the melted butter and cook, stirring frequently, until the onion becomes soft and translucent, approximately 3–4 minutes.
Add the drained potatoes to the skillet with the onions and stir to coat evenly with the butter.
Continue cooking over medium heat, stirring occasionally, for 2–3 minutes until the potatoes begin to absorb the butter and develop light golden edges.
Add the chicken broth, curry powder, and lemon juice to the skillet. Stir well to distribute the curry powder evenly and combine all ingredients.
Reduce heat to medium-low and simmer uncovered for 8–10 minutes, stirring occasionally, until the potatoes have absorbed most of the liquid and the flavors have melded. The potatoes should be tender and the sauce mostly absorbed.
Taste and adjust seasoning with additional curry powder or lemon juice if desired. Serve warm.
