Ingredients
3 1/2 pound whole chicken
3 tbsp Goose fat
1 tsp Salt
½ tsp Black pepper
Directions
Preheat your oven to 350°F.
Pat the chicken dry with paper towels. Rub the entire bird inside and out with goose fat, then season generously with salt and pepper.
Place the chicken breast side down on a roasting rack set in a roasting pan. Roast for 30 minutes.
Flip the chicken breast side up. Continue roasting for 20 to 30 minutes more, basting with pan juices every 10 minutes, until the thickest part of the thigh reaches an internal temperature of 165°F.
Remove the chicken from the oven and let rest for 5 minutes before carving and serving.
