Plenty of ice cubes

Directions

  1. Add the halved apricots, raspberries, light coconut milk, vanilla bean paste, and a generous handful of ice cubes to a high-powered blender.

  2. Blend on high speed until completely smooth and creamy, about 1–2 minutes, adding more ice if needed for the desired thickness and chill.

This smoothie is genuinely quick—three minutes is honest for blending, with no prep trickery. Apricots and raspberries are available year-round at Harris Teeter, Food Lion, Publix, and Walmart, though frozen berries and canned apricots cost less and work equally well; coconut milk and vanilla are staples everywhere. The real cost driver is buying fresh apricots and raspberries in the same week, which runs roughly $3 to $4 per serving. It's a same-morning drink with no leftovers, so it works best for households that want a quick breakfast or snack, not a component of a larger meal.
