Ingredients
2 canned pear halves
6 cups mesclun mix baby greens
½ tablespoon grated Parmesan cheese
1⅓ cups grated carrots
3 tablespoons walnuts
¼ cup pear juice
¼ teaspoon cider vinegar
¼ teaspoon honey
¼ teaspoon Dijon mustard
1 dash salt and black pepper to taste
¼ teaspoon extra virgin olive oil
Directions
Prepare the dressing by combining the pear juice, cider vinegar, honey, Dijon mustard, salt, and black pepper in a blender. Add the extra virgin olive oil and blend until smooth and well combined. Taste and adjust seasonings as needed.
Place the mesclun mix in a large mixing bowl. Drizzle the pear dressing over the greens and gently toss until all the leaves are lightly coated.
Drain the canned pears and cut them into bite-sized pieces. Add the chopped pears, walnuts, and grated carrots to the bowl with the dressed greens. Toss gently to combine all ingredients.
Divide the salad evenly among 6 serving plates, using approximately 1 cup per portion. Top each serving with 1/2 tablespoon of grated Parmesan cheese and serve immediately.
Comments
All ingredients land easily at Harris Teeter, Food Lion, or Kroger in Charlotte—no special trips required for pears, mesclun, walnuts, or anything else on this list. The cost per serving runs roughly $2 to $2.50 if you're not buying premium organic greens, a solid value for six people. The 15-minute stated time is honest; you're washing greens, slicing pear and carrot, toasting walnuts if you want, and whisking a basic vinaigrette. It's a fussy salad in the sense that it demands same-night eating and doesn't reheat, so it's best for a dinner where everyone sits down together, not for leftovers or meal prep.
