Ingredients

4 cups seedless watermelon, cubed

1 knob fresh ginger root, peeled

1 cup granulated sugar

1 cup water

1 vanilla bean, halved and seeds scraped

1 English cucumber, sliced

1 cup club soda

candied ginger, for serving

Directions

  1. Add the watermelon cubes to a blender and blend on high speed until completely smooth and liquified into juice.

  2. Pour the blended watermelon through a fine mesh strainer into a large pitcher, pressing gently to extract all the juice. Discard the pulp.

  3. In a small saucepan, combine the sugar, water, ginger knob, scraped vanilla bean seeds, and the empty vanilla pod.

  4. Place the saucepan over medium heat and whisk constantly until the sugar is completely dissolved. Allow the mixture to simmer gently for 1 to 2 minutes until it reaches a light syrupy consistency.

  5. Remove the saucepan from the heat and allow the vanilla ginger syrup to cool to room temperature.

  6. To assemble each drink, fill a glass with crushed ice. Pour 4 ounces of the cooled vanilla ginger syrup into the glass, followed by 4 ounces of the fresh watermelon juice. Add several cucumber slices and pour in about 2 ounces of club soda. Stir well and taste, adjusting with more syrup, juice, or soda as desired.

  7. Garnish with candied ginger and serve immediately while cold and fizzy.
