Ingredients
2 cups fresh watermelon, cut into cubes
4 ounces French feta cheese, crumbled
1 cup balsamic vinegar
Directions
Pour the balsamic vinegar into a small saucepan and bring to a simmer over medium heat. Allow it to reduce for about 10 minutes, stirring occasionally, until it becomes thick and syrupy (roughly one-quarter of its original volume). Transfer to a bowl and let cool to room temperature.
Cut the fresh watermelon in half, remove the seeds, and cut the flesh into 1-inch cubes. You should have approximately 2 cups of cubed watermelon.
Crumble the French feta cheese into bite-sized pieces using your fingers or a fork.
In a large serving bowl or on a platter, gently combine the watermelon cubes and crumbled feta cheese, being careful not to crush the watermelon.
Drizzle the cooled balsamic reduction over the salad just before serving, tossing gently to coat. Serve immediately while the watermelon is cool and refreshing.
