Recipe GLPR365040b617e8f6
A vibrant, umami-rich dressing that blends spicy fermented kimchi with savory white miso and silken tofu for a creamy, smooth texture. The fermented flavors are balanced with a touch of rice vinegar and enriched with vegetable oil. Perfect for drizzling over salads, grain bowls, or vegetables. Ingredients
6 tablespoons kimchi, coarsely chopped
4 tablespoons white miso
½ cup silken tofu
½ cup vegetable oil or grapeseed oil
1 tablespoon rice vinegar
Kosher salt to taste
Directions
Add the coarsely chopped kimchi, white miso, silken tofu, vegetable oil, and rice vinegar to a blender.
Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed. This should take 1–2 minutes.
Taste the dressing and season with kosher salt as desired, then blend briefly to incorporate.
Transfer to an airtight container and refrigerate until ready to use. The dressing will thicken slightly as it chills.
Before serving, if the dressing has become too thick, whisk in a little water, a teaspoon at a time, until you reach the desired consistency.
Comments
White miso and silken tofu are not reliably stocked at Charlotte's mainstream grocers—Harris Teeter carries miso sporadically, but silken tofu usually requires a trip to an Asian market like H-Mart or a specialty stop, a real burden for a weeknight dressing. The cost per serving runs about $1.50–$2.00 due to tofu and quality miso, reasonable for four servings but front-loaded ingredient expense. The stated 10 minutes is honest if you have both components at home, but kimchi can vary wildly in salt, so expect to taste and adjust seasoning on the fly. This dressing keeps well in the fridge for a week and reheats gently, making it worthwhile prep once you've stocked the pantry, but the sourcing friction means it suits a planned meal rather than an impulse dinner.
