Ingredients
1 whole pastured chicken, cut into pieces (or 2 pounds chicken wings, jointed)
1/3 cup extra-virgin olive oil
1/3 cup chipotle Tabasco sauce
2 tablespoons low-sodium tamari
3 tablespoons Worcestershire sauce
1/2 lemon, halved
4 cloves garlic, minced
Directions
Preheat your grill or grill pan to medium-high heat (about 400°F). If using a whole chicken, pat the pieces dry with paper towels and season lightly with salt and pepper.
In a small bowl, whisk together the olive oil, chipotle Tabasco, tamari, and Worcestershire sauce until well combined. Stir in the minced garlic and squeeze the lemon juice into the marinade, stirring to blend. Set aside 3 tablespoons of the glaze for finishing; the rest will be your basting liquid.
Brush the chicken pieces generously on both sides with the basting glaze. Arrange them skin-side down on the hot grill.
Grill for 8–10 minutes without moving until the skin is deeply charred and releases easily. Flip the pieces and brush the cooked side with more basting glaze.
Continue grilling for another 10–15 minutes, basting every 3–4 minutes, until the thickest part of the thigh reaches an internal temperature of 165°F when measured with an instant-read thermometer. Smaller pieces or wings may finish sooner.
Transfer the chicken to a serving plate and brush immediately with the reserved finishing glaze. Rest for 2 minutes before serving.
