Ingredients
3½ cups frozen green beans
8 small new potatoes, washed, peeled, and halved
1 medium scallion, chopped
¼ teaspoon salt
water
Directions
Wash your hands with soap and warm water before beginning.
In a large stock pot, combine the frozen green beans, halved potatoes, chopped scallion, and salt. Add enough cold water to cover all ingredients by about 1 inch.
Place the pot over high heat and bring the water to a rolling boil.
Once boiling, reduce the heat to medium and simmer until the potatoes are fork-tender and the green beans are cooked through, approximately 12–15 minutes.
Drain the vegetables in a colander and transfer to a serving dish. Adjust salt to taste if needed before serving.
