Ingredients

1/2 small red onion, peeled and thinly sliced

1 tablespoon sherry vinegar

1 tablespoon rice vinegar

2 English seedless cucumbers, thinly sliced

Kosher salt to taste

1 teaspoon caraway seeds

5 tablespoons neutral vegetable oil

Freshly ground black pepper to taste

2 tablespoons chopped fresh dill

Directions

  1. In a small bowl, whisk together the sherry vinegar, rice vinegar, caraway seeds, and a pinch of kosher salt. Let the mixture sit for 1 minute to allow the caraway seeds to bloom and release their flavor.

  2. Slowly whisk in the neutral vegetable oil until the dressing is combined and slightly emulsified. Taste and adjust the seasoning with additional kosher salt and freshly ground black pepper as needed.

  3. Place the thinly sliced cucumbers in a large serving bowl and season lightly with kosher salt. Add the sliced red onion to the bowl with the cucumbers.

  4. Pour the prepared vinaigrette over the cucumber and onion mixture and gently toss to combine, ensuring all pieces are evenly coated.

  5. Just before serving, scatter the fresh chopped dill over the top of the salad and give it a gentle stir to incorporate the herb throughout. Serve chilled or at room temperature.
