Ingredients

8 ounces short pasta (penne, ziti, or campanelle)

2 cups chicken broth

1 1/2 cups water

2 cups cherry tomatoes, halved

1/2 cup chopped sweet onion

1/2 cup chopped fresh basil

1/2 cup chopped fresh parsley

2 tablespoons butter

Salt and black pepper to taste

Grated parmesan cheese for garnish

Directions

  1. In a large pot, combine the pasta, chicken broth, water, halved cherry tomatoes, chopped onion, fresh basil, and fresh parsley. Bring the mixture to a gentle simmer over medium-high heat.

  2. Once simmering, reduce heat to medium and stir occasionally. Cook for the time indicated on your pasta box until the pasta is tender and most of the liquid has been absorbed, usually 8-12 minutes.

  3. When the pasta reaches your desired tenderness, remove from heat and stir in the butter until it is completely melted and incorporated throughout the dish.

  4. Taste the pasta and season generously with salt and black pepper according to your preference.

  5. Divide the pasta among four serving bowls. Top each portion with grated parmesan cheese and a sprinkle of additional fresh basil before serving.
