Ingredients

12 medium white potatoes

3 medium yellow onions

⅛ cup matzoh meal

2 teaspoons kosher salt

3 eggs

Directions

  1. Preheat your oven to 350°F. Lightly oil a 9x13-inch baking dish with vegetable oil.

  2. Peel the potatoes and shred them using a box grater or food processor. Place the shredded potatoes in a clean kitchen towel and squeeze firmly to remove excess moisture.

  3. Peel and thinly slice the onions. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15–20 minutes until deeply golden and caramelized.

  4. In a large mixing bowl, crack the eggs and beat them together. Add the squeezed potato shreds, caramelized onions, matzoh meal, and kosher salt. Mix well until all ingredients are evenly combined.

  5. Pour the potato mixture into the prepared baking dish and spread it into an even layer.

  6. Bake for 45–50 minutes, until the top is golden brown and the kugel is set throughout.

  7. Remove from the oven and let rest for 5 minutes before serving.
