Ingredients
1 teaspoon chipotle chili flakes
2 tablespoons honey
1/4 cup fresh lime juice
1/4 cup olive oil
1/4 teaspoon black pepper
1/4 teaspoon sea salt
4 boneless pork chops (about 1 inch thick)
Directions
In a small bowl, whisk together the lime juice, olive oil, honey, chipotle chili flakes, sea salt, and black pepper until well combined and the honey is fully dissolved.
Place the pork chops in a shallow dish or large resealable bag and pour the marinade over them, ensuring each chop is thoroughly coated. Let marinate at room temperature for 1 hour or refrigerate for up to 4 hours.
Preheat your grill to medium-high heat (about 400°F). Allow grill grates to get hot.
Remove pork chops from the marinade, allowing any excess liquid to drip off. Place the chops directly on the grill grates.
Grill the pork chops for 3 to 5 minutes on the first side without moving them, until light grill marks form. Flip and grill the second side for another 3 to 5 minutes, until the internal temperature reaches 145°F when measured at the thickest part with a meat thermometer.
Remove the grilled pork chops to a clean plate and let them rest for 3 minutes before serving. Transfer to serving plates and top with your choice of pineapple salsa.
