Ingredients
1 teaspoon canola oil
1 pound ground beef
½ teaspoon kosher salt
¼ teaspoon ground black pepper
½ cup ketchup
2 tablespoon yellow mustard
2 tablespoon brown sugar
1 jar queso dip
16 ounces tortilla chips
Directions
Heat canola oil in a large skillet over medium-high heat.
Add ground beef and cook, breaking it apart with a spoon as it cooks, until browned and no pink remains, about 5–7 minutes. The beef should reach an internal temperature of 160°F.
Drain excess fat from the skillet if needed.
Season the cooked beef with kosher salt and ground black pepper.
Stir in ketchup, yellow mustard, and brown sugar until well combined. Simmer for 3–5 minutes, stirring occasionally, until the sauce is heated through.
Warm the queso dip according to package directions.
Arrange tortilla chips on a serving platter or plate.
Drizzle the queso dip over the chips.
Spoon the sloppy joe meat mixture over the chips and queso.
Serve immediately while the meat and cheese are still warm.
