Ingredients
1 1/2 cups packed shredded zucchini
1/4 cup panko or regular bread crumbs
1 large egg, lightly beaten
1/4 to 1/2 cup shredded sharp cheddar cheese
1/4 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Cooking spray or oil for greasing
Directions
Preheat your oven to 425°F. Line a rimmed baking sheet with parchment paper and lightly spray with cooking spray, or lightly grease a baking sheet with oil.
Wrap the shredded zucchini in a clean kitchen towel and squeeze firmly over the sink to remove as much moisture as possible. The zucchini should feel quite dry.
In a medium bowl, combine the dried zucchini, bread crumbs, beaten egg, cheddar cheese, basil, garlic powder, salt, and black pepper. Stir until the mixture is evenly combined.
Drop heaping tablespoonfuls of the zucchini mixture onto the prepared baking sheet, spacing them about an inch apart. Gently flatten each mound with the palm of your hand to create small patties.
Bake for 16 to 20 minutes, until the edges turn golden brown and the bites are set. Remove from the oven and allow to cool for a few minutes before serving.
