Ingredients
4 large russet potatoes
1½ teaspoons kosher salt
1½ teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
¾ teaspoon dried thyme
½ teaspoon cayenne pepper
½ teaspoon freshly ground black pepper
2 quarts canola or vegetable oil for deep frying
1 tablespoon fresh parsley, finely chopped, for garnish (optional)

Directions
Scrub the russet potatoes under cold running water and pat dry. Cut each potato lengthwise into 1/4-inch-thick slices, then cut each slice into 1/4-inch-wide fries. Place cut potatoes in a bowl of cold water and let them soak for at least 10 minutes to remove excess starch.
In a small bowl, combine the kosher salt, onion powder, garlic powder, smoked paprika, dried thyme, cayenne pepper, and black pepper. Mix well and set aside.
Drain the soaked potatoes and pat them thoroughly dry with paper towels or a clean kitchen towel—removing excess moisture is essential for crispy fries.
Heat the canola or vegetable oil to 350°F in a large, heavy-bottomed pot or deep fryer. Use a kitchen thermometer to ensure the correct temperature.
Working in batches to avoid overcrowding, carefully place the dried fries into the hot oil. Fry for about 5-7 minutes until light golden and crispy on the outside, stirring occasionally for even cooking.
Using a slotted spoon or spider strainer, transfer the fried potatoes to a paper towel-lined plate to drain excess oil.
While the fries are still warm, sprinkle the Cajun spice mixture generously over them and toss to coat evenly. Add more salt to taste if needed.
Transfer the seasoned fries to a serving dish, garnish with fresh parsley if desired, and serve immediately with remoulade, fry sauce, or ketchup.
