Ingredients
3¼ pounds watermelon, rind removed, cut into 1 1/2-inch blocks
3 ounces crumbled feta cheese
2 large leaves fresh basil leaves, very thinly sliced
Directions
Arrange the watermelon blocks on a serving platter or individual plates.
Using a small melon baller, carefully scoop out a shallow well from the top center of each watermelon block, being careful not to scoop all the way through.
Divide the crumbled feta cheese evenly among the hollowed centers of the watermelon blocks, filling each well generously.
Top each feta-filled block with a small amount of the thinly sliced fresh basil, distributing it evenly across all pieces.
Serve immediately while the watermelon is chilled and fresh.
Comments
Watermelon and feta are staples at every Charlotte grocer, and basil grows year-round locally or appears fresh at Harris Teeter and Kroger; no special trips required. At roughly a dollar per pound for watermelon in summer and six dollars for quality feta, this runs about two dollars per serving in season, making it genuinely cheap for entertaining. The stated fifteen minutes is honest—you're cutting and crumbling, not cooking—and this works perfectly as a make-ahead appetizer that holds for hours on a hot day. The only constraint is seasonality; outside June through August, watermelon loses its appeal and feta stays pricey while basil may need the grocery store instead of the garden.
