Jack-o'-Lantern Sugar Cookies

Soft cut-out sugar cookies iced bright orange, with mini chocolate chips for the faces. The dough holds its shape in the oven, so every pumpkin comes out the way you cut it.

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 cups powdered sugar
4 tablespoons milk
Orange gel food coloring
1/2 cup mini chocolate chips
Directions
Whisk the flour, baking powder and salt together in a bowl.
In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3 minutes. Beat in the egg and vanilla.
Mix in the flour mixture on low speed until a soft dough forms. Divide it in half, flatten each half into a disk, wrap and chill for 1 hour.
Heat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
Roll the dough 1/4 inch thick on a floured surface and cut out pumpkin shapes. Place them 1 inch apart on the baking sheets.
Bake 8 to 10 minutes, until the edges are just set but not browned. Cool 5 minutes on the sheet, then move to a rack to cool completely.
Stir the powdered sugar and milk into a smooth, thick icing and tint it orange. Spread it over each cookie.
Before the icing sets, press in mini chocolate chips for the eyes, nose and a jagged smile. Let the icing harden for about an hour before stacking.
