Healthy Spaghetti and Meatballs with Tomato Sauce

Ingredients
1 pound lean ground turkey or chicken
6 ounces silken tofu
1/2 cup panko or bread crumbs
2 garlic cloves, finely minced
1/2 onion, grated
2 tablespoons fresh basil, minced
1 teaspoon kosher salt
freshly ground black pepper to taste
3 tablespoons butter
2 14-ounce cans crushed tomatoes
1 pound spaghetti, cooked
freshly grated parmesan cheese for serving
Directions
In a large bowl, combine the ground turkey, crumbled silken tofu, breadcrumbs, minced garlic, grated onion, fresh basil, salt, and black pepper. Mix gently but thoroughly with your hands until just combined; do not overmix. Using a melon baller or your hands, form the mixture into 12 to 16 meatballs of equal size.
In a large sauté pan or soup pot, melt the butter over medium-high heat. Add the crushed tomatoes and stir to combine. Cover the pot and bring the sauce to a simmer.
Once the sauce is simmering, reduce the heat to low and carefully add the meatballs to the sauce. Cover and simmer gently for 20 minutes, until the meatballs are cooked through (ground poultry should reach an internal temperature of 165°F).
Taste the sauce and adjust seasoning with additional salt and pepper as needed. Remove from heat.
Divide the cooked spaghetti among six serving bowls. Spoon the meatballs and tomato sauce evenly over the pasta. Top each serving with freshly grated parmesan cheese and serve immediately.
