1 pound ground turkey (85% lean)

1 cup diced red bell peppers

1/2 medium onion, chopped

1 3/4 cups low-sodium canned corn, drained

10 okra pods, sliced

3 medium yellow squash, sliced

Directions

  1. Thoroughly wash your hands with soap and warm water before beginning preparation.

  2. Heat a large frying pan or skillet over medium heat. Add the ground turkey and cook, breaking it apart with a spoon or spatula as it cooks, until no pink remains and the internal temperature reaches 160°F, approximately 5-7 minutes. Stir occasionally for even cooking.

  3. Add the diced red bell peppers, chopped onion, drained corn, sliced okra, and sliced yellow squash to the pan with the cooked turkey.

  4. Continue cooking over medium heat, stirring gently, for about 5 minutes until the vegetables become tender-crisp. Taste and adjust seasoning as desired. Serve warm.
