Ingredients
½ cup artichoke hearts, drained and chopped
6 tablespoons hummus
4 tablespoons shredded mozzarella cheese
6 roasted red pepper strips
½ cup fresh spinach, chopped
2 slices whole wheat bread
¼ teaspoon cayenne pepper
1 tablespoon extra virgin olive oil, for drizzling
Directions
Preheat your broiler to 400°F. Line a baking sheet with foil or place bread slices on a broiler-safe surface.
Spread 3 tablespoons of hummus evenly on each bread slice.
Arrange 3 roasted red pepper strips over the hummus on each slice.
Divide the chopped spinach equally between the two bread slices, distributing it over the peppers.
Top each slice with ¼ cup of chopped artichoke hearts.
Sprinkle 2 tablespoons of shredded mozzarella cheese on each prepared slice.
Place under the preheated broiler for 8–10 minutes, or until the mozzarella is completely melted and beginning to show light golden spots. Watch carefully to prevent burning.
Remove from the broiler and sprinkle ⅛ teaspoon of cayenne pepper over each sandwich for a subtle heat. Drizzle ½ tablespoon of olive oil over each melt.
Serve immediately while the cheese is still warm and the bread remains crispy at the edges.
