Ingredients
3 medium potatoes
1 lemon, juiced
1 garlic cloves, minced
2 tablespoons vegetable oil
Directions
Preheat your oven to 375°F (190°C).
In a small bowl, whisk together the lemon juice, minced garlic, and vegetable oil until combined. Set aside 1 tablespoon of this mixture for finishing.
Peel the potatoes and cut them into 1-inch cubes.
Pour the larger portion of the lemon-garlic-oil mixture into the bottom of a casserole dish or small baking pan, coating the surface evenly.
Add the potato cubes to the pan and toss gently until all pieces are coated with the lemon mixture.
Bake uncovered for approximately 30 minutes, stirring halfway through, until the potatoes are fork-tender and lightly golden on the edges.
Remove from the oven and drizzle the reserved lemon-garlic-oil mixture over the hot potatoes, tossing gently to coat.
Serve warm as a side dish.
