Breakfast Potato and Egg Burritos

Ingredients
1 tablespoon vegetable oil
4 cups potatoes, finely diced
1 medium onion, chopped
1 medium red or green bell pepper, chopped
3 garlic cloves, minced
2 eggs, beaten
1 teaspoon black pepper
1/2 teaspoon salt
1/2 cup shredded cheddar cheese, optional
Salsa or hot sauce, to taste, optional
9 flour tortillas
Directions
Wash your hands thoroughly with soap and warm water. Peel and finely dice the potatoes into small, uniform pieces to ensure even cooking.
Heat the vegetable oil in a large skillet over medium-high heat for about 1 minute until it shimmers.
Add the diced potatoes, chopped onion, bell pepper, and minced garlic to the hot oil. Stir well to coat all vegetables evenly.
Cook for 8–10 minutes, stirring occasionally, until the potatoes are tender when pierced with a fork and the edges begin to brown. If the potatoes are still firm after 10 minutes, continue cooking for another 2–3 minutes.
Reduce the heat to medium. Push the cooked potato mixture to the sides of the skillet, creating a clear space in the center for the eggs.
Pour the beaten eggs into the cleared center space of the skillet. Allow the eggs to sit briefly until the bottom just starts to set, then scramble gently until fully cooked through and no wet egg remains, about 2–3 minutes.
Stir the scrambled eggs together with the cooked potato mixture until evenly combined. Season with salt and black pepper, then remove from heat.
Warm the flour tortillas briefly in a dry skillet or over a gas flame for about 15–20 seconds per side to make them pliable.
Place about 1/2 cup of the potato-egg filling in the center of each warm tortilla. If using cheese, sprinkle a small amount on top of the filling. Fold the bottom of the tortilla up, fold in the sides, and roll tightly away from you to form a burrito.
Serve the burritos warm, topped with salsa or hot sauce and additional cheddar cheese if desired.
