A vibrant and unexpected salsa that combines sweet fresh cherries with smoky chipotle heat, brightened by lime juice, cilantro, and garlic. Perfect as a dip with tortilla chips, a topping for grilled meats or fish, or served alongside appetizers. The textured blend of finely minced and coarsely chopped cherries creates an interesting mouthfeel with bursts of fresh fruit flavor.

Ingredients

2 cups fresh pitted cherries, halved

1 to 2 teaspoons chipotle pepper

¼ cup fresh cilantro, chopped

1 garlic clove

½ fresh lime juice

¼ cup red onion, finely chopped

to taste salt

Directions

  1. Add the garlic clove to a food processor and pulse several times until it is finely minced.

  2. Add half of the halved cherries along with the chipotle pepper, cilantro, red onion, and lime juice to the food processor. Pulse until the mixture is finely chopped.

  3. Add the remaining cherries and pulse gently just a few times until the cherries are coarsely chopped, keeping some larger cherry pieces intact for texture.

  4. Transfer the salsa to a serving bowl and season with salt to taste. Serve immediately or refrigerate until ready to serve.

All ingredients are stocked year-round at Charlotte chains—cherries and chipotle are reliable finds at Harris Teeter and Kroger even in winter, though fresh cherry season peaks May through July locally and cheaper then. The cost runs about $1.50 to $2 per serving depending on cherry price, driven entirely by fruit; this is genuinely affordable for a fresh condiment. The 12-minute time is honest: halving cherries, mincing chipotle and garlic, and combining takes roughly that, no hidden steps. It's a same-night dish that doesn't reheat well, so plan it as a fresh topping for grilled chicken or pork rather than a make-ahead component.
