Ingredients
1 tablespoon whole coriander seeds
1 tablespoon whole allspice berries
1 tablespoon green cardamom pods
1½ teaspoons black peppercorns
1 tablespoon ground cinnamon
Directions
Heat a dry skillet over medium heat. Add the coriander seeds, allspice berries, cardamom pods, and peppercorns to the pan.
Toast the spices for 2–3 minutes, stirring frequently, until fragrant and lightly darkened. Be careful not to burn them.
Remove the pan from heat and let the spices cool to room temperature, about 5 minutes.
Transfer the cooled spices to a spice grinder or mortar and pestle and grind into a fine powder.
Add the ground cinnamon to the freshly ground spices and stir well to combine.
Store in an airtight container away from light and heat for up to 3 months. Use to season roasted chicken, potatoes, vegetables, or grains.
