2 large cloves garlic cloves, peeled and sliced

1 large bay leaf, crumbled fine

2 teaspoons paprika

1 tablespoon kosher salt

¼ teaspoon cayenne pepper

¼ teaspoon crushed dried red chili flakes

¼ teaspoon ground black pepper

2 tablespoons olive oil

4 lbs chicken wings, uncooked

Directions

  1. Combine the sliced garlic, crumbled bay leaf, paprika, kosher salt, cayenne pepper, chili flakes, and black pepper in a small bowl to create the dry spice blend.

  2. Pat the chicken wings dry with paper towels and place them in a large mixing bowl or resealable bag.

  3. Drizzle the olive oil over the chicken wings and toss until evenly coated.

  4. Add the spice blend to the oiled wings and toss thoroughly, coating all sides evenly with the seasoning.

  5. Preheat the grill to medium-high heat, about 400°F.

  6. Oil the grill grates lightly to prevent sticking, then place the seasoned chicken wings on the grill in a single layer.

  7. Grill the wings for 10-12 minutes on the first side without moving them, allowing a flavorful char to develop.

  8. Flip the wings and continue grilling for another 10-15 minutes, until the internal temperature reaches 165°F at the thickest part of the meat.

  9. Remove the wings from the grill and let rest for a few minutes before serving.
