Everything Baked Pita Chips

Crispy, golden pita chips seasoned with a savory blend of poppy seeds, garlic and herbs, and kosher salt. These homemade chips are baked until perfectly crunchy and make an excellent snack or side dish.

Ingredients
5½ Pocket-less pita flatbreads
2½ tablespoons Olive oil
2 teaspoons Poppy seeds
2 teaspoons Garlic and herb seasoning blend
¾ teaspoon Kosher salt
Directions
Preheat your oven to 375°F. Line two large rimmed baking sheets with parchment paper or leave them unlined as preferred.
Cut the pita flatbreads in half, then cut each half into quarters to create 8 triangles per bread. You should have approximately 40-48 triangles total.
In a small bowl, combine the poppy seeds, garlic and herb seasoning blend, and kosher salt to create the 'everything' seasoning mixture.
Place the pita triangles in a large bowl and drizzle with olive oil. Toss gently until all pieces are evenly coated with the oil.
Sprinkle the 'everything' seasoning mixture over the oiled pita triangles and toss well to ensure all pieces are evenly coated with the seasoning.
Distribute the seasoned pita triangles in a single, even layer across the two prepared baking sheets. Do not overlap the pieces for even baking.
Bake for 10-15 minutes, rotating the baking sheets halfway through the baking time. There is no need to flip the pita triangles during baking.
The chips are done when they are golden brown and completely crispy. Remove from the oven and allow them to cool on the baking sheets for 2-3 minutes before serving.
