Ingredients

2 large eggs

salt to taste

black pepper to taste

1 teaspoon mirin

1 teaspoon vegetable oil

1/4 small-to-medium zucchini, thinly sliced

1/2 scallion, cut into 1 1/2-inch pieces

2 tablespoons chopped kimchi

Directions

  1. Crack the eggs into a bowl. Add a pinch of salt, a few grinds of black pepper, and the mirin. Whisk together until well combined and smooth.

  2. Heat the vegetable oil in a nonstick skillet over medium heat. Once the oil is shimmering, add the sliced zucchini, scallion pieces, and chopped kimchi. Sauté for about 2 minutes, stirring occasionally, until the vegetables begin to soften and the kimchi releases its flavors.

  3. Pour the egg mixture evenly over the vegetables in the skillet. Cover with a lid and cook over moderate heat for 2 minutes, until the eggs are mostly set but still slightly moist on top.

  4. Remove the lid. Carefully fold the omelet in half using a spatula. Cook for another 1-2 minutes if you prefer a firmer omelet, or serve immediately for a softer center.

  5. Slide the omelet onto a plate. Serve hot, with additional chopped kimchi on the side if desired.
