Ingredients
1 1/3 cups unsalted butter, softened to room temperature
1 1/2 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup sprinkles
Directions
Preheat your oven to 350°F. Line baking sheets with parchment paper and set aside.
In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed. Beat for about 3 minutes until the mixture becomes light, fluffy, and pale in color.
Add the eggs one at a time, beating well after each addition. Pour in the vanilla extract and mix until the ingredients are fully combined and the mixture is smooth.
In a separate small bowl, whisk together the flour, baking powder, and salt. Fold the sprinkles into this dry mixture until they are evenly distributed.
Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix; stop as soon as the dough comes together.
Using a cookie scoop, drop rounded portions of dough onto the prepared baking sheets, spacing them about 1 inch apart.
Bake for 11 minutes, or until the edges are lightly golden but the tops still appear slightly soft. Remove from the oven and allow the cookies to cool on the baking sheet for 10 minutes.
Transfer the cookies to a wire cooling rack and let them cool completely before serving or storing.
