Ingredients
¾ cup graham cracker crumbs
2 tbsp granulated sugar
3 tbsp butter, melted (for crust)
¾ cup butter, melted (for brownie batter)
¾ cup unsweetened cocoa powder
1½ cup granulated sugar
3 large large eggs
¾ cup all-purpose flour
½ tsp salt
2 cup marshmallows
2 bar Hershey's chocolate bars, broken into pieces
Directions
Preheat your oven to 350°F. Line an 8x8-inch baking pan with aluminum foil, leaving some overhang for easy removal later.
In a small bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and 3 tablespoons of melted butter. Mix until the texture resembles wet sand.
Press the graham cracker mixture evenly into the bottom of your prepared pan. Bake for 8 minutes until lightly set, then remove from the oven.
While the crust bakes, prepare the brownie batter. In a large bowl, whisk together the 3/4 cup of melted butter and the cocoa powder until smooth.
Add the 1 1/2 cups of sugar to the cocoa mixture and stir well to combine.
Beat in the three eggs one at a time, stirring until the batter is thick and well blended.
Fold in the flour and salt until just combined; do not overmix.
Pour the brownie batter over the baked graham cracker crust and spread it evenly.
Return the pan to the oven and bake for 30 to 35 minutes, until the top is set but the brownies still look slightly underbaked in the center. The edges should start to pull away from the pan.
Remove the brownies from the oven and switch the oven setting to broil. Allow the oven to preheat for broiling.
Arrange the marshmallows and chocolate pieces evenly over the warm brownies. Place the pan under the broiler and watch carefully for 2 to 3 minutes, until the marshmallows are golden brown and slightly charred in spots.
Remove from the oven and let cool completely in the pan at room temperature for at least 30 minutes. Once fully cooled, lift the brownies from the pan using the foil overhang and cut into 12 pieces.
Comments
S'mores brownies tick every box for a Charlotte weeknight: all ingredients are shelf-stable staples at any Harris Teeter, Food Lion, or Walmart, running roughly $12–14 total or about $1–1.20 per serving. The stated 50 minutes is honest—mixing takes 5 minutes, baking 25–30, cooling 15—making this a genuine last-minute dessert. These are unfussy one-bowl brownies, though marshmallows brown fast under the broiler so you'll need to watch the last 2 minutes; leftovers keep three days wrapped and don't require reheating. The only caveat is the marshmallow topping loses its marshmallow quality on day two (it gets chewy rather than fluffy), so plan to eat these fresh.
