Ingredients

3/4 cup all-purpose flour

1 teaspoon baking powder

pinch Pinch of salt

1 large egg plus 1 large egg yolk

3/4 cup sugar

1/2 teaspoon pure vanilla extract

1 stick (4 ounces) unsalted butter, melted and cooled

1 1/2 Fuji apples, peeled, cored and cut into 1/2-inch thick wedges

Directions

  1. Preheat your oven to 350°F (175°C). Lightly butter and flour a 9-inch round cake pan, tapping out any excess flour.

  2. In a small bowl, whisk together the flour, baking powder, and salt until well combined.

  3. In a large bowl, whisk together the egg, egg yolk, and sugar until the mixture is pale and thick, about 2 to 3 minutes. Whisk in the vanilla extract.

  4. Gently fold the melted and cooled butter into the egg mixture until just combined.

  5. Fold the flour mixture into the batter until just combined, being careful not to overmix.

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Arrange the apple wedges on top of the batter in a decorative pattern, pressing them in slightly so they are partially submerged.

  8. Bake for 25 to 30 minutes, until the cake is golden brown and a toothpick inserted into the cake portion (not the apple) comes out clean or with just a few moist crumbs.

  9. Allow the cake to cool in the pan for 10 minutes, then invert onto a serving plate or let cool completely in the pan before serving.
