Ingredients
1 cup butter, softened
1/3 cup sugar
2/3 cup ground roasted almonds
1-2/3 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup powdered sugar
Directions
Preheat your oven to 325°F.
In a large mixing bowl, combine the softened butter, sugar, and ground roasted almonds. Using an electric mixer set to medium speed, beat the mixture until smooth and well blended.
In a separate bowl, whisk together the all-purpose flour and salt.
Add the flour mixture to the butter mixture. Using the electric mixer on low speed, blend until the dough just comes together. Do not overmix.
Roll the dough into balls approximately the size of a tablespoon and place them on ungreased baking sheets, spacing them about 2 inches apart.
Bake for 10 to 15 minutes, or until the bottoms of the cookies are lightly browned. The tops will remain light in color. This is the desired appearance.
Transfer the cookies from the baking sheet to a cooling rack and allow them to cool completely, approximately 30 minutes.
While the cookies cool, mix the ground cinnamon, ground nutmeg, and powdered sugar in a small bowl until well combined.
Once the cookies have cooled completely, gently dip the top of each cookie into the spiced sugar mixture, coating evenly. Place the finished cookies on a plate to set.
