Ingredients

2½ cups Fresh pineapple, chopped

1 inch piece Fresh ginger root

8 leaves Fresh mint leaves

1 teaspoon plus more for rimming Granulated sugar, divided

as needed Ice cubes

Directions

  1. Combine the chopped pineapple, 1-inch piece of fresh ginger, and 8 mint leaves in a blender. Add 1 teaspoon of sugar if desired. Blend on high speed until completely smooth, about 1-2 minutes.

  2. Pour the blended mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing gently to extract all the juice. Discard the pulp. Cover and refrigerate the juice until ready to serve.

  3. To rim the glasses, take a fresh pineapple cube and rub it along the outer edge of each glass. Pour a small amount of granulated sugar onto a plate and dip the moistened rim into the sugar to coat evenly.

  4. Fill each rimmed glass with ice cubes. Pour the chilled pineapple juice over the ice, filling the glass three-quarters full.

  5. Garnish each drink with a fresh mint leaf placed on top or along the rim. Serve immediately while cold.
