2 cups boneless rotisserie chicken breast, coarsely chopped

½ whole Juice from 1/2 lemon

3 tablespoons olive oil

1 tablespoon dried oregano

1/4 to 1/2 teaspoon ground red pepper

1 cup grape tomatoes, halved

1/2 cup pitted kalamata olives, coarsely chopped

1/2 cup crumbled feta cheese

1/2 cup seedless cucumber, chopped

6 tablespoons plain hummus

6 butter lettuce leaves

6 (8-inch) tortillas

Directions

  1. Place the coarsely chopped rotisserie chicken in a medium mixing bowl. Drizzle with fresh lemon juice, olive oil, and sprinkle with dried oregano and red pepper. Gently toss everything together until the chicken is evenly coated with the seasonings.

  2. Add the halved grape tomatoes, chopped kalamata olives, crumbled feta cheese, and diced cucumber to the seasoned chicken. Stir gently to combine all ingredients without breaking up the feta or vegetables too much.

  3. Lay out each tortilla on a clean surface. Spread approximately 1 tablespoon of hummus evenly across the center of each tortilla, then top with one butter lettuce leaf.

  4. Divide the chicken and vegetable filling evenly among the 6 tortillas, spooning it over the lettuce layer. Roll up each tortilla tightly, starting from one end and tucking in the sides as you go. If desired, secure each wrap with a toothpick to hold it together.
