Ingredients
2 wedges (5 cm each) fresh watermelon
40 g crumbled feta cheese
1 handful fresh mint leaves, chopped
2 lime wedges
Directions
Place one watermelon wedge on a cutting board. Using a sharp knife, carefully slice horizontally between the pink flesh and the outer rind to loosen the fruit. Then make vertical cuts downward through the flesh to create bite-size chunks, while keeping the fruit still attached to the rind.
Hold the watermelon wedge over a serving bowl and use your knife to scoop the chunks into the bowl. Pick out any dark seeds and discard them.
Repeat the cutting and scooping process with the second watermelon wedge.
Scatter the crumbled feta cheese evenly over the watermelon chunks.
Sprinkle the chopped fresh mint leaves over the top.
Squeeze the juice from both lime wedges over the entire dish and serve immediately.
