Ingredients
1 Starfruit, ends trimmed and sliced
1 Grapefruit, peeled and segmented
2 Apricots, pits removed and sliced
1 tablespoon Honey
Directions
Rinse the starfruit under cool running water and pat dry. Trim the thin edges at both ends and discard. Slice the starfruit crosswise into thin, even pieces.
Cut the grapefruit in half. Using a small sharp knife or grapefruit knife, carefully separate the flesh from the pith and rind. Segment the grapefruit by cutting along the membranes, allowing the segments to fall into a bowl and collecting any juice.
Rinse the apricots and pat them dry. Cut each apricot in half along the seam and remove the pit. Slice each half into thin, even pieces.
In a serving bowl, gently combine the starfruit slices, grapefruit segments, and apricot slices. Drizzle the honey evenly over the fruit and toss gently with a rubber spatula or wooden spoon until all pieces are lightly coated with honey and any grapefruit juice.
Divide the fruit salad between two bowls and serve immediately, or cover and refrigerate for up to 2 hours before serving.
