Ingredients

1 pound fresh tomatoes (any variety)

1½ cups whole dill pickles, cut into chunks

2 tablespoons extra virgin olive oil

½ teaspoon garlic powder

1½ teaspoon dry oregano

½ teaspoon salt

¼ teaspoon freshly ground black pepper

Directions

  1. Rinse the tomatoes and cut them into bite-sized chunks. Place the tomato chunks in a colander set over a bowl and let them drain for 30 minutes to remove excess moisture and seeds. Discard the accumulated liquid from the bowl.

  2. Transfer the drained tomatoes to a medium mixing bowl. Add the dill pickle chunks, extra virgin olive oil, garlic powder, dry oregano, salt, and freshly ground black pepper.

  3. Gently toss all ingredients together until well combined. Serve immediately as a fresh condiment for sandwiches, or refrigerate until ready to use.
