2 tbsp vegetable oil

6 pork sausages, cut into bite-sized pieces

1 onion, roughly chopped

1 carrot, roughly chopped

1 celery stick, roughly chopped

1 red bell pepper, roughly chopped

3 garlic cloves, roughly chopped

2 thyme sprigs, plus extra for garnish (optional)

1 heaped tbsp Cajun spice mix

1 tsp sweet smoked paprika

1 (400g) can chopped tomatoes

300 ml beef stock

1 (400g) can kidney beans in chilli sauce

Salt and freshly ground black pepper to taste

Directions

  1. Heat 1 tbsp of the vegetable oil in a large heavy-bottomed pot or flame-proof casserole over medium heat. Working in batches to avoid overcrowding, add the sausage pieces and cook for 4–5 minutes, turning frequently, until deeply browned on all sides. Transfer the browned sausages to a clean plate and set aside.

  2. Add the remaining 1 tbsp oil to the pot. Stir in the chopped onion, carrot, celery, and red pepper along with a pinch of salt. Cook for 15–20 minutes over medium heat, stirring regularly, until the vegetables are caramelized and golden at the edges.

  3. Add the chopped garlic, thyme sprigs, Cajun spice mix, and smoked paprika. Stir well and cook for 3–4 minutes until fragrant.

  4. Pour in the canned tomatoes (with their juice), beef stock, and kidney beans with their sauce. Bring to a boil, then return the sausages to the pot. Reduce heat to medium and simmer gently for 30 minutes, stirring occasionally, until the stew is slightly reduced and simmering gently. The sausages will continue cooking through during this time.

  5. Taste and adjust seasoning with salt and black pepper as needed. Serve hot, garnished with fresh thyme leaves if desired, alongside jacket potatoes, mashed potatoes, or crusty bread.
