The tea is brewed hot, then chilled over ice for a crisp, smooth finish.

Ingredients

6 1/2 cups water, divided

1/2 cup granulated sugar

1/2 vanilla bean

3 good quality black tea bags

Directions

  1. Bring 4 cups of water to a boil in a medium saucepan over high heat.

  2. While the water heats, prepare the vanilla bean by splitting it lengthwise with a sharp knife and scraping out the tiny seeds inside.

  3. Once the water reaches a rolling boil, remove the saucepan from heat and immediately add the 3 black tea bags and the vanilla bean pod with its scraped seeds.

  4. Allow the tea to steep for 4-5 minutes, infusing the vanilla flavor into the black tea.

  5. Remove the tea bags and vanilla bean pod from the hot tea, pressing gently on the bags to release any remaining liquid.

  6. Add the granulated sugar to the hot tea and stir until completely dissolved.

  7. Transfer the sweetened tea to a glass pitcher or bowl and let it cool to room temperature, approximately 15-20 minutes.

  8. Once cooled, add the remaining 2 1/2 cups of cold water to the tea and stir to combine.

  9. Refrigerate the vanilla iced tea for at least 45 minutes until thoroughly chilled.

  10. Pour into ice-filled glasses and serve immediately. You may garnish with fresh mint or a vanilla bean slice if desired.
