Ingredients
2 large eggs
1 1/2 cups low-fat milk
1/3 cup granulated sugar
1 cup peanut butter
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
Directions
Wash your hands thoroughly with soap and warm water before starting to prepare the recipe.
Preheat your oven to 350°F (175°C). Lightly grease or coat a loaf pan with non-stick cooking spray to prevent sticking.
In a large mixing bowl, beat the eggs until they are well combined.
Add the milk, sugar, and peanut butter to the beaten eggs in the same bowl.
Mix all the wet ingredients together until they are well blended and uniform in texture.
In a separate bowl, combine the flour, baking powder, and salt. Whisk together to distribute the baking powder and salt evenly throughout the flour.
Add the dry ingredient mixture to the wet ingredients in the large bowl.
Stir the mixture just until all the dry ingredients are moistened. Do not overmix; the batter should be slightly lumpy.
Pour the batter into the prepared loaf pan. The pan should be approximately half full.
Bake in the preheated oven for 60 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Remove the bread from the oven and allow it to cool in the pan for several minutes before turning it out onto a wire rack to cool completely.
Comments
Every ingredient is a staple at every Charlotte grocery chain, with peanut butter especially cheap given North Carolina's regional production and strong supply. The cost per serving lands around $0.80–$1.10 depending on peanut butter quality, making it genuinely economical for a ten-serving loaf. The stated 75 minutes is honest for mixing, rising, and baking, though you'll need 15 minutes of hands-on work upfront and then passive time. This is a reliable weeknight dessert or breakfast that reheats perfectly for several days, requires no fussy technique, and appeals to most households—the only minor drawback is that it's straightforward rather than remarkable, so it doesn't quite reach 5.0.
