Ingredients
½ cup almonds
¼ cup oats
½ cup pumpkin seeds, shelled
3 Tbsp hemp seeds
1 Tbsp chia seeds
½ cup cooked sweet potato
6 Tbsp peanut butter
½ tsp cinnamon
¼ cup mashed banana
1–2 Tbsp maple syrup or honey, optional
¼ cup chocolate chips, optional
Directions
Add oats, pumpkin seeds, hemp seeds, chia seeds, and almonds to a food processor. Pulse until the nuts and seeds are broken down into small, coarse pieces with some texture remaining.
Add the mashed sweet potato, peanut butter, mashed banana, cinnamon, and maple syrup or honey if using. Process until the mixture is well combined and begins to hold together when squeezed. Add chocolate chips if desired and pulse once or twice to distribute them. Taste the mixture and add more cinnamon or sweetener as needed.
Transfer the dough onto a sheet of plastic wrap. Gather the edges and squeeze gently to form a large, cohesive ball. Wrap tightly and refrigerate in the freezer for 30–45 minutes until firm enough to portion.
Remove the chilled dough and use your hands or a spoon to portion it into 16 equal snack-sized balls, roughly 1 inch in diameter. Store the finished bites in an airtight container in the freezer for up to 2 weeks, or in the refrigerator for up to 4 days.
