Ingredients

4 slices sandwich bread

6 oz. thinly sliced deli roast beef

1/4 cup light mayonnaise

1/3 cup bread-and-butter pickle chips

Directions

  1. Lay out all four slices of bread on a clean work surface. Spread the light mayonnaise evenly on two of the slices.

  2. Layer half of the thinly sliced roast beef on one of the mayo-spread slices. Top with half of the bread-and-butter pickle chips, distributing them evenly.

  3. Place one of the plain bread slices on top to complete the first sandwich. Repeat with the remaining roast beef, pickle chips, and the second mayo-spread slice with the last plain slice of bread.

  4. Serve immediately, or cut each sandwich diagonally if desired.

All ingredients are commodity items stocked everywhere—Harris Teeter, Food Lion, Walmart, ALDI, and Kroger banners all carry quality deli roast beef, soft bread, mayo, and pickles with no special stops required. Cost per serving lands around $2.50–$3.00 depending on roast beef grade, making this budget-friendly for a quick lunch. The stated 10 minutes is honest if you use deli-counter roast beef; assembly is genuinely that fast. This is a same-night, no-reheat dish that won't satisfy as a dinner for most households, and it's best eaten fresh—not a leftover play.
