Ingredients
3 cups fresh or frozen mixed berries
1 cup granulated sugar
2 cups water
1 zest of one lemon
1 juice of one lemon
Directions
Combine the sugar and water in a saucepan and bring to a simmer over medium heat, stirring occasionally until the sugar dissolves completely. This creates a light sugar syrup base. Remove from heat and let cool to room temperature, about 15 minutes.
If using fresh berries, add them to a blender. If using frozen berries, thaw them partially and add to the blender. Blend until smooth and completely puréed.
Press the berry purée through a fine-mesh strainer into a large bowl to remove seeds and pulp, stirring gently to extract as much liquid as possible. You should have about 2 cups of smooth berry liquid.
Add the cooled sugar syrup to the strained berry purée and stir well. Stir in the lemon zest and lemon juice, mixing until fully combined.
Transfer the mixture to a shallow freezing dish or ice cream maker if you have one. If freezing in a dish, place it in the freezer for about 30 minutes until the mixture begins to freeze around the edges.
Stir the partially frozen mixture with a fork, breaking up ice crystals and pushing the frozen edges toward the center. Return to the freezer.
Repeat the stirring process every 30 minutes for about 3 to 4 hours total, until the sorbet reaches a smooth, scoopable consistency with fine ice crystals throughout.
Divide the finished sorbet among four serving bowls or glasses and serve immediately for the best texture, or store covered in the freezer for up to one week.
