Ingredients

42 leaves spinach leaves

4 green chilies, chopped roughly

2¼ cups water

1 cup plain yogurt

2 tablespoons gram flour (besan)

to taste salt

1½ tablespoons vegetable oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

3 dried red chilies, broken

½ small onion, finely chopped

1 teaspoon ginger paste

Directions

  1. Blend half of the spinach leaves (about 20 leaves) with 4-5 chopped green chilies and ¼ cup of water until you obtain a smooth, fine paste. Set aside.

  2. In a mixing bowl, combine the prepared spinach-chili paste with the plain yogurt, gram flour, salt to taste, and 2 cups of water. Whisk thoroughly until the mixture is completely smooth with no lumps.

  3. Pour the oil into a medium saucepan and heat over medium heat.

  4. Once the oil shimmers, add the mustard seeds, cumin seeds, and broken dried red chilies. Allow them to sizzle and release their aromatic oils for about 1 minute.

  5. Add the finely chopped onion and ginger paste to the pan. Cook, stirring frequently, until the onion becomes completely soft and translucent, about 3-4 minutes. Do not allow the onion to brown.

  6. Slowly pour the yogurt-gram flour mixture into the pan while stirring constantly to prevent lumps from forming.

  7. Continue stirring and bring the mixture to a gentle boil. Once boiling, cook for 4-5 minutes, stirring occasionally, until the kadhi thickens slightly.

  8. Chop the remaining spinach leaves (about 2 leaves as whole or 20 leaves from the remaining batch) into thin strips and add them to the kadhi.

  9. Stir well and continue cooking for 2 minutes more until the fresh spinach wilts slightly. Turn off the heat and serve hot as a side dish alongside rice or Indian bread.
