Ingredients
1 tablespoon chicken broth
1 cup diced onion
2 celery stalks, thinly sliced
2 cloves garlic, minced
1 pound 4 ounces lean ground turkey
1 cup julienned carrots
4 cups chopped cabbage
2 cans (14.5 ounces each) diced tomatoes
31 ounces chicken broth (remaining portion)
1 teaspoon dried basil
2 teaspoons dried oregano
1 teaspoon dried parsley
1 teaspoon dried sage
1 teaspoon dried thyme
Dash of black pepper
Directions
In a large soup pot, add 1 tablespoon of chicken broth with the diced onion, sliced celery, and minced garlic. Stir to coat the vegetables with the broth and cook over medium heat for about 2 minutes until the vegetables begin to soften.
Add the ground turkey to the pot, breaking it apart as it cooks. Continue cooking over medium heat for 8 to 10 minutes, stirring occasionally, until the turkey is cooked through and no longer pink, reaching an internal temperature of 165°F.
Stir in the julienned carrots, chopped cabbage, diced tomatoes with their juice, the remaining 31 ounces of chicken broth, basil, oregano, parsley, sage, thyme, and pepper. Increase heat to medium-high and bring to a boil.
Once the soup reaches a boil, reduce the heat to medium-low and simmer uncovered for approximately 5 minutes, stirring occasionally, until the cabbage wilts and the carrots become tender. Taste and adjust seasonings as desired. Serve hot.
