¾ cup packed brown sugar

4 tablespoons butter

1½ teaspoons ground cinnamon

3 tablespoons all-purpose flour

5 Granny Smith apples, peeled and chopped

3 tablespoons heavy cream for brushing

2 packages refrigerated pie crust dough

Turbinado sugar for topping

Directions

  1. Melt the butter in a heavy skillet over medium heat.

  2. Add the chopped apples to the skillet and toss to coat evenly with the melted butter.

  3. Sprinkle the flour over the apples and stir constantly for about 30 seconds to cook the flour.

  4. Add the brown sugar and cinnamon, stirring to combine all ingredients. Simmer for 5-10 minutes, stirring occasionally, until the apples are softened but still hold their shape. Remove from heat and allow the filling to cool slightly.

  5. While the filling cools, allow the refrigerated pie crust dough to sit at room temperature for about 10 minutes. Preheat the oven to 375°F.

  6. Lightly roll out one package of pie crust dough. Using a 5½-inch bowl as a guide, invert the bowl over the dough and cut out 3 circles with a sharp knife. Gather the leftover dough, gently roll it out again, and cut one more circle to yield 4 individual crusts from each package. Repeat with the second package of dough to create 8 total crusts.

  7. Place approximately ½ cup of the apple filling on one half of each dough circle, leaving a ½-inch border. Fold the empty half of the dough over the filling to form a half-moon shape, then use the tines of a fork to crimp and seal the curved edges.

  8. Using a small sharp knife, cut a small X into the top of each hand pie to allow steam to vent during baking.

  9. Brush the top of each hand pie with the heavy cream, then sprinkle turbinado sugar over the surface.

  10. Place the hand pies on a baking sheet and bake at 375°F for 20-25 minutes, or until the crust is golden brown. Cool for a few minutes before serving warm or at room temperature.
