Ingredients

1 cup unsalted butter, at room temperature

3/4 cup confectioners' sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

2 cups all-purpose flour

2 tablespoons coarsely ground coffee

1 tablespoon strong brewed coffee, cooled

3 tablespoons sweetened condensed milk

1/2 teaspoon vanilla bean paste

1 tablespoon whole milk

1/2 cup confectioners' sugar

1 pinch espresso powder

Directions

  1. In a large mixing bowl, cream together the softened butter and 3/4 cup confectioners' sugar until light and fluffy, about 2 minutes.

  2. Add the vanilla extract and salt to the butter mixture and mix until combined.

  3. In a separate bowl, whisk together the all-purpose flour and coarsely ground coffee.

  4. Gradually add the flour-coffee mixture to the butter mixture, mixing on low speed until a soft dough forms.

  5. Scoop the dough into small balls (about 1 teaspoon each) and place on parchment-lined baking sheets, spacing them about 1 inch apart. Gently flatten each ball slightly with the bottom of a glass.

  6. Bake at 350°F for 12 to 14 minutes, until the edges are just set and the tops remain pale. Remove from the oven and let cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

  7. While the cookies cool, prepare the frosting by whisking together the sweetened condensed milk, cooled brewed coffee, vanilla bean paste, whole milk, 1/2 cup confectioners' sugar, and espresso powder until smooth and spreadable.

  8. Once cookies are completely cooled, spread a small amount of the coffee frosting on top of each cookie. Serve immediately or store in an airtight container.
