A refreshing Italian frozen dessert with bright lime juice and fresh mint. This granita is made by freezing a simple sugar syrup infused with mint and lime, then scraping it with a fork to create fine ice crystals. Serve as a palate cleanser or light frozen treat.

Ingredients

1 cup sugar

2 cups water

5 fresh mint leaves

1/2 cup fresh lime juice

Directions

  1. In a saucepan, combine the water and sugar. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves completely, about 3-4 minutes.

  2. Remove from heat and add the fresh mint leaves to the hot syrup. Let steep for 5 minutes to infuse the mint flavor.

  3. Strain the syrup through a fine-mesh sieve to remove the mint leaves. Discard the mint.

  4. Stir in the lime juice and let the mixture cool to room temperature, about 15-20 minutes.

  5. Pour the cooled mixture into a shallow baking pan or similar freezer-safe container with a large surface area.

  6. Place in the freezer for 1 hour. Using a fork, scrape the frozen edges inward and break up any ice crystals that have formed, stirring well.

  7. Return to the freezer for another hour. Repeat the scraping and stirring process with a fork.

  8. Freeze for a final hour, scraping with a fork one last time. The granita should have a light, crystalline texture similar to shaved ice.

  9. Serve immediately in chilled glasses, or store in the freezer covered until ready to serve. Scrape gently with a fork before serving to fluff the crystals.
