Mint Lime Granita

A refreshing Italian frozen dessert with bright lime juice and fresh mint. This granita is made by freezing a simple sugar syrup infused with mint and lime, then scraping it with a fork to create fine ice crystals. Serve as a palate cleanser or light frozen treat.

Ingredients
1 cup sugar
2 cups water
5 fresh mint leaves
1/2 cup fresh lime juice
Directions
In a saucepan, combine the water and sugar. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves completely, about 3-4 minutes.
Remove from heat and add the fresh mint leaves to the hot syrup. Let steep for 5 minutes to infuse the mint flavor.
Strain the syrup through a fine-mesh sieve to remove the mint leaves. Discard the mint.
Stir in the lime juice and let the mixture cool to room temperature, about 15-20 minutes.
Pour the cooled mixture into a shallow baking pan or similar freezer-safe container with a large surface area.
Place in the freezer for 1 hour. Using a fork, scrape the frozen edges inward and break up any ice crystals that have formed, stirring well.
Return to the freezer for another hour. Repeat the scraping and stirring process with a fork.
Freeze for a final hour, scraping with a fork one last time. The granita should have a light, crystalline texture similar to shaved ice.
Serve immediately in chilled glasses, or store in the freezer covered until ready to serve. Scrape gently with a fork before serving to fluff the crystals.
